2004/NV Louis d’Or  Viognier 89.4%/Blanc Du Bois 10.6%, American

Style - A rich, medium-bodied, complex style of white wine based primarily on the Viognier grape and incorporating significant barrel and malolactic fermentation components with seductive aromas. Quite elegant as an apéritif, stand alone wine, but also very food friendly. Appearance: Light, white gold. Aroma: An enticing tapestry of floral notes, tropical fruit and subtle vanilla spice. Taste: Its beautifully presented fruit is supported by a rich texture and pleasing mouthfeel derived from malolactic fermentation in new American oak barrels and extended lees contact (sur lie). The wine is light on the pallet, yet rounds out in the middle nicely and finishes moderately long with clean, smooth and fine textures.

Food & Serving Suggestions Think Creole French  (Galatoire’s?) cuisine when contemplating food with this wine, calling for the best of freshly caught delicate Gulf fish, especially speckled trout or redfish, prepared with rich sauces and side dishes. Right at home as well with a rich crawfish etouffé of South Louisiana or light Mediterranean style hors d’oeuvres and pasta with cream sauces and fresh herbs. 

2006 Roux St. Louis (Tanque IX) Blanc Du Bois, St. Tammany Parish, Louisiana

Style - Aromatic, fruity, off-dry  (slightly sweet) - R.S. of 19 gL (1.9%), with refreshingly crisp acidity, exhibiting its muscat or muscato parentage both on the nose and the palate.

Appearance:  Light gold, brilliant clarity. Aroma:  Cascading fruit (apple, tropical and citrus), floral and invitingly perfumey. Taste: Fairly delicate on the palate (consistent with its enticing nose and light gold color), this wine shows unexpected breeding and subtleties for a white wine produced in the warm, southeastern United States. Tastes are bright, medium to light bodied and fruity with hints of mango, apple and melon. The finish is smooth, clean and refreshing.

Food & Serving SuggestionsA perfect accompaniment to well and hotly seasoned, South Louisiana country (Cajun), Southwestern USA (Tex-Mex) and Asian/Oriental cuisine, or delightful as an apéritif. A surprisingly good compliment to the rich and boldly seasoned, classic Barbecued Shrimp dishes of New Orleans. Serve well chilled - as cold as you like!

2006 Le Trolley   Blanc Du Bois, St. Tammany Parish, Louisiana

StyleDry, crisp (good acidity), aromatic, medium bodied white

wine with a distinctive mineral edge, inspired by and recalling the wonderful dry white wines of the Alsatian and Loire Valley regions of France.   Appearance:  Light, white gold with a touch of green; good density with “legs” and a “calming” edge to the surface. Aroma:  A lovely parade of tropical and citrus fruits with floral notes just below the surface and ephemeral spice/herbal accents (spearmint) joining the procession. Look for mango, a squeeze of lime, grapefruit, ripe pear and peach! Taste: Full mix of ripe citrus and fresh tropical fruits presented very brightly with refreshing acidity and a hint of minerality. Smooth, silky, clean and fresh feel on the palate with a fairly long, moderately drying finish. Excellent overall balance with delicate and fine elements combined with enough strength and depth to enhance carefully seasoned fish and light meat based dishes.

Food & Serving SuggestionsServe moderately well-chilled (45° - 50° F) with the savory dishes of south Louisiana, especially those including oysters and freshly caught fish and shellfish prepared with rich but not overly spiced sauces. Matches very well with soft-ripened, triple cream cheeses.

2005 Zydeco Rosato – Louisiana Rosé   

Style – Another creation unique to the land of the bayou in the style of a classic French rosé, perhaps not as austere and slightly off- dry.   Appearance: Razor sharp clarity that dazzles with a salmon-pink color and hints of orange – recalling a sunset over Lake Pontchartrain. Aroma: Like the scent of perfume behind a woman’s ear, its aroma is at the same time enticing and familiar – crisp apples with a hint of strawberry fruit, spice (ginger, allspice, with a bit of candy – Red Hots!). Taste: A seamless transition from the seductive nose to an accommodating silky palate that opens to a taste at once bright, rich and sophisticated, and crescendos from subtle to bold like a well-ripened grapefruit. It’s a wine to dance with, and a wine for the young at heart. From its legs to its aroma and taste, Zydeco Rosato is … well, sexy!

Food & Serving Suggestions - Quite compatible with a wide range of food preparations including highly seasoned fare such as gumbos, seafood or turtle sauce piquant, blackened redfish or more simply to cool the fire of a well-seasoned crawfish boil. Also, very pleasant as an apéritif in late afternoon/early evening gatherings of people on patios or decks close to the Gulf of Mexico. Serve very well chilled (40º - 45º F) or colder.

2003/NV Criolla Rosso   Cabernet Sauvignon, American

Style – A svelte-bodied red wine, showing feminine, sinewy strength. Alluring, clean aromas of spice and dark berry fruit precede a beautifully balanced taste experience showing both style and grace. A moderate alcohol level helps to make this wine very respectful of high quality, well prepared food.   Appearance:  Medium-dark red with gem-like clarity. Aroma:  Fruit  (dark berry) forward with classic signatures of the cabernet sauvignon grape. Taste:  High fruit tones are softened by the warmth of vanilla laced wood tastes. The finish is moderately long and shows firm but smooth tannins and lingering fruit and oak notes.

Food & Serving Suggestions - Bring on the roast, steak, lamb, duck or goose preparations. Compliments rich, full-bodied cheeses (cheddars, blues, etc.) very well.  May we also include a rareish, char-broiled or grilled hamburger? Serve slightly cooled (65º - 68º F).

1998 CRIOLLA ROSSO RESERVE   Cabernet Sauvignon     

Released November 2000                                                               

Eight barrels were selected in the summer of 1999 for special further handling. The lots were blended together, fined with egg whites then returned to all new American Oak barrels for an additional 6 months in barrel. The wine was bottled in mid December, 1999 and bottle aged in our cellar for just under a year until release on November 22, 2000. We look for this wine to continue to develop in bottle over the next several years with optimum fruit and wood integration beginning to manifest 4 or 5 years out. Upon release, the wood elements are pronounced and tend to dominate, but very fine fruit lurks beneath the surface. Only 177 cases made. A special and rare wine produced from fruit grown in the Clayton vineyard located north of Lubbock in the Texas Panhandle

2003/NV Le Grand Louis  Syrah/Shiraz, American

Style Full-bodied, deeply colored red wine from the classic wine grape of the northern Rhone aged in American oak barriques.   Appearance:   Deep red-purple almost inky.  Aroma: Floral-perfumey aromas with hints of nutmeg and fruit seduce the senses -– an invitation .  Taste:  Tastes of rich, ripe fruit (plum, black cherry) predominate and continue to build in intensity before giving way to a long finish—hinting of toast and spice. Soft but ample tannins make it remarkably drinkable upon release. Will be hard to set aside, but should be well worth a long and careful cellaring.

Food & Serving Suggestions During the cold weather season, serve with comfort foods such as stews. gumbos, cassoulets and pork roasts. As the weather warms, try with country patés or a creole daube glacé Serve slightly cooled (65º - 68º F).

2002 Rouge Militaire Cynthiana/Norton St. Tammany Parish, Louisiana

Style A distinctive, complex red wine produced from a uniquely American varietal (a cultivar of vitis aestivalis) that was grown in St. Tammany Parish and the Florida Parishes of South Louisiana prior to Prohibition, now being rediscovered across America and starting to show its world class wine potential. Overall,  the style is Burgundian, reminiscent of complex, earthy pinot noir and the medium bodied wines of  eastern France or perhaps Barolos of northern Italy. Good acidity helps secure this varietal’s reputation for producing outstanding, long-lived  food wines.

 Appearance:  Dark garnet color with amber tones on the edges - again recalling an aspect of Burgundy. Aroma: Complex, with red fruit (plum, some berry) and stone fruit (apricot, cherry, peach), mixed with earthy, spicey (peppery) and caramelized wood notes. Taste: Initial  expressions of  berry, stone fruit, earth, wood and spice in a framework consistent with the nose continue to develop and spread building a rich mid-palate of  layered, complex  and balanced tastes. Lingering, smooth finish.

Serving Suggestions - Serve lightly chilled (60°-65°F)  with country French type dishes, e.g., coq au vin or vinegar chicken, ham with mustard sauces, light game (rabbit, duck, quail, turkey) or even grilled fish – tuna, amberjack, etc.

2004/NV Dah Red   Cabernet Sauvignon (53%) Syrah (47%), American

Style  Full-bodied, rich, juicy, dark red wine produced from well ripened cabernet sauvignon and syrah/shriaz grapes grown in northern California. And we’ve got some good time invested in quality American Oak. We shall use the word “ Big” here to describe this wine. Yes! But with alluring grace and drop dead gorgeous show stopping appeal.

Appearance:   Dah Red is very dah red, breathlessly so!  Aroma: Dark, ripe berry fruit, maybe even a bit jammy.  Taste:  Big and juicy – there, we said it again

Food & Serving Suggestions The whole spectrum of barbecued or grilled meats, especially brisket, lamb or veal chops. Nothing fancy – just good quality stuff. Air-conditioned room temperature should be just right for drinking Dah Red.

Old Vine Zinfandel

Vineyard & Winemaker Notes: Grapes arrived in excellent condition with Brix of 24.8º and were destemmed immediately. Following a cold soak of 3 1/2 days, the must was yeasted.  After fermentation was stopped by the addition of high proof wine spirits, the wine was allowed to settle out for almost 7 weeks before going into old (5+years) American oak barrels just before Christmas 2002.  The wine remained in barrel for a little over 3 years and racked only once before being bottled in late February 2006.

Style - suggestive of a young tawny port in style. The wine developed some nutty, complex flavors and aromas and also dropped some of its color during its protracted stay in the old barrels.  It tends to finish dry and clean after an initial powerful burst of ripe fruit tastes. Ready to drink upon release in May, 2006 and should continue to develop in the bottle for a number of years.  

2001 ROUGE MILITAIRE    Cynthiana/Norton (100%) 

St. Tammany Parish, Louisiana

A distinctive red wine produced from a uniquely American varietal (a cultivar of vitis aestivalis) which was grown here in St. Tammany Parish prior to Prohibition, now being rediscovered across America and starting to show its world class wine potential. The wines we have produced thus far tend to suggest Burgundy; i.e., pinot noir, and seem to be maintaining the varietal’s reputation for longevity. This is a particularly intense vintage and may require a bit of time in bottle to achieve its full potential, which seems very promising.  Appearance - Extremely clear with ruby and deep garnet color – perhaps recalling a very good vintage of Burgundy. Aromas – Complex, with red fruit (plum, some berry) and stone fruit (apricot, cherry, peach), mixed with earthy, spicy (peppery) and caramelized wood notes. TasteIntense, forward, attack that includes tastes of  berry, stone fruit, earth, wood and spice in a framework consistent with the nose.  The flavors spread to create a full, steadily building mid palate. The mouth feel and finish, at this time,  reflect the youthfulness of a very high quality, powerful wine.  It continues to settle down and mellow since its bottling in December  2002, portending.

Eight barrels (about two hundred cases) of this vintage were selected for special further handling. Appearance--Clear with a deep garnet color. Aromas-- Complex with hints of spice (cloves) and red fruit (plum, some berry). Taste--Intense forward attack that includes tastes of berry, stone fruit, earth and spice. The flavors crescendo to create an intense mid palate. The finish is rounded and smooth, reflecting its maturity.
